Stuffed squash makes a great meal, especially when you can eat the WHOLE squash! Here, I took a small organic delicata squash, halved it and took out the seeds, popped the halves cut side down in the toaster oven at 375 for about 15-20 minutes until tender, then stuffed them with some leftover chicken stir fry. Always top with sriracha! 🙂
*Stuffed bell peppers work great too! The dish I made below is obviously not healthified, hence the overflow of cheese. But so good.
