Waffles 2 Ways (including gluten-free!)

The Mr. just said “His and her waffles…guess which one’s Kristina’s!” Yes, we’re back to eating waffles! All is well in the world. I experimented with a few different types of waffles recently. The first recipe turned out pretty dry and even hurt my throat trying to swallow it, so I made a few modifications and ended up with this gem:

Gluten-Free Herbs ‘n’ Protein Waffle

Ingredients: (makes 2 servings)

  • 1/4 cup of millet flour
  • 1/4 cup of almond flour
  • 1 scoop of Quest Multipurpose Protein Powder
  • 1 teaspoon of baking powder
  • 1 teaspoon melted coconut oil
  • 2 eggs
  • 2 drop of Young Living Rosemary Essential Oil
  • 2 teaspoons of Italian seasoning
  • Pinch of salt
  • Water as needed to get the batter to a stir-able state (but not too runny)

Instructions: 

  1. Whisk your eggs in a mixing bowl and incorporate the protein powder until dissolved. Add the coconut oil slowly.
  2. Add the millet flour, almond flour, and baking powder. Add water as needed to maintain proper consistency.
  3. Add your seasonings, Rosemary essential oil, and pinch of salt.
  4. Pour into your waffle iron and cook until firm to the touch.

Now you can get creative! I shredded some Kerrygold cheese on top.

But I didn’t stop there! Then I made little breakfast sandwiches by adding some sweet potato chicken sausage patties on top.

Here’s another waffle I tried:

Green Eggs and Waffles (not gluten free)

Ingredients: (makes 2 servings)

  • 1/4 cup of millet flour
  • 1/2 cup Kodiak Cakes
  • 1 scoop of superfood greens, pumpkin spice holiday edition
  • 2 eggs
  • Water as needed to get the batter to a stir-able state (but not too runny)

Instructions: 

  1. Whisk your eggs in a mixing bowl and incorporate millet and kodiak cake flours.
  2. Add water as needed to maintain proper consistency.
  3. Add your superfood greens.
  4. Pour into your waffle iron and cook until firm to the touch.

Topped it off with some plain, nonfat Greek Yogurt, granola, and a touch of maple syrup. Green is GREAT!
